Black Bean Salsa

Serves 6

For the dressing:
2/3 cup Sophia Extra Virgin Olive Oil
1/3 cup Sophia Lime Juice
1/2 tablespoon Sophia Red Wine Vinegar
3 tablespoon chopped cilantro
1/2 tablespoon Sophia Sriracha
1/2 teaspoon cumin
1 teaspoon Sophia Atlantic Sea Salt
Pepper to taste

For the salad:
1 can Sophia Black Beans, drained and rinsed
1 can corn, drained and rinsed
1 small red onion, finely chopped
1 large tomato, diced
1 avocado, diced
1 mango, diced

In a small bowl, make the dressing by whisking together olive oil, lime juice, red wine vinegar, cilantro, Sriracha, cumin, salt, and pepper. Set aside. In a large bowl, combine the remaining ingredients. Toss with dressing and serve with Sophia Panetti.
