Moroccan "Harira" Chickpea Soup

Moroccan "Harira" Chickpea Soup...Exotic Made Easy!
2 cans 14oz chickpeas, rinsed and drained
1 can 14oz chopped tomatoes
3 cups chicken, vegetable or meat stock
3 Tbsp extra virgin olive oil
1 medium onion , finely chopped
2 celery sticks, diced
1 large carrot, peeled, diced
3 cloves garlic, crushed
2 tsp ground cumin
2 tsp sweet red paprika
1/4 tsp turmeric
Sea salt and black pepper, to taste
Hot chili paste, to taste
zest and juice of ½ lemon
1 cup cilantro or parsley, chopped
Sautee onion, garlic, celery and carrot in olive oil over medium heat until softened.

Add stock, tomatoes, chickpeas, cumin, paprika, turmeric, sea salt, black pepper, and chili paste.

Bring to a boil then simmer for at least 10 minutes.

Stir in lemon juice and half the herbs and simmer 2 minutes.

Top each bowl with lemon zest and remaining chopped herbs.

Serve and enjoy!!
