1 1/2 lb plum tomatoes, seeded and diced
1/4 cup fresh basil, chopped
6 tablespoon Sophia Extra Virgin Olive Oil
2 tablespoon red onion, finely chopped
2 tablespoon Sophia Chopped Garlic
2 tablespoon Sophia Red Wine Vinegar
Traditional Sophia Balsamic Glaze to taste
Sophia Atlantic Sea Salt to taste
Pepper to taste
In a bowl, combine tomatoes, basil, 3 tbsp of olive oil, red onion, garlic, red wine vinegar, salt, and pepper. Let marinate for 10-15 minutes. Brush panetti with the remaining olive oil. Spoon the tomato mixture onto panetti. Drizzle with balsamic glaze. Enjoy!
